I am taking some measurements with the Black Globe Temperature Sensor.
I am wondering what the update interval of the sensor is- or how often it takes measurements.

The measurement of the sensor itself is fast. The analog measurement takes only about 20 milliseconds.
You have to consider that the sensor has a thermal mass, which gives it a much slower response time than how fast you can measure it. The speed of air movement around the sensor also affects the response time.
